1 cauliflower florets.
1 tablespoon butter.
2 cloves of garlic.
2 tablespoons cream cheese.
1 teaspoon Parmesan cheese.
Salt to taste.
Pepper to taste.
- Steam the cauliflower and drain. The drier, the better.
- Mash the cauliflower with a ricer or food processor or blender.
- Heat 1 tablespoon butter and saute minced garlic until fragrant.
- Add 3 tablespoons of liquid milk, cook over low heat until it boils slightly.
- Mix the milk above, butter, and garlic with mashed cauliflower mixture.
- Add grated cheddar cheese or cream cheese and parmesan. Add salt & pepper to taste.
- Low carbohydrate mashed potatoes are ready to be served as side dishes of your favourite dishes (steak, grilled chicken, grilled fish, etc.)
