Here’s how to make it: Cook your noodles and drain them ( reserving about 2 cups of liquid) and combine chopped zucchini with minced garlic, onion, and olive oil.

Heat the olive oil over medium heat and then mix in your pasta ingredients. Made from the zucchini plant, this amazing noodle soup is a staple in my heart and mind.

I first discovered this delicious noodle soup while visiting my daughter’s home for the weekend. We had heard it was one of the best soups you could make, so we took a chance and gave it a try. To our delight, it was the best tasting soup we have ever tried, and the kids raved about how easy it was to make.

I’m not exactly sure how to classify Zucchini Noodle recipes, but I do know that I love them! For starters, there is the obvious garlic and cheese combination which is mouth watering with a hint of rich nutty overtones. Secondly, the texture of the noodle itself is silky smooth and satisfying, while the sauce is creamy and delicious.

I have even managed to add a splash of wine to the Zucchini Noodle Alfredo which was a welcome change from my previous tomato based creations. Now when I’m preparing a meal in the near future, I will be using this tasty combination of vegetables as a base for one of the Italian inspired dishes that I’ll be creating.

Zucchini Noodle Alfredo is the answer to cravings for a decadent pasta dish. It’s creamy, cheesy, low-carb, and takes just minutes to prepare!


  • 1 pound zucchini

  • 1 Tablespoon olive oil

  • 1.5 Tablespoons cream cheese 1 ounce room temperature

  • 1 Tablespoon low-fat sour cream

  • ¼ cup Parmesan cheese grated


  • Use a spiralizer or vegetable peeler to made zucchini noodles.(I have Vegetti and Paderno spiralizers. See links below.)
  • Heat olive oil in a large pan over medium heat.
  • Add zucchini noodles to pan and saute for about 5 minutes.
  • Remove noodles to serving dish.
  • Add cream cheese, sour cream and Parmesan cheese to pan and stir to combine.
  • Pour sauce over noodles and toss to combine.
  • Top with additional Parmesan cheese, if desired.
