Easy Mexican rice is one of my favorite ways to make an everyday meal that is easy to prepare and is a great addition to any menu.

Ingredients

  • 1 cup of rice.

  • 1 large onion.

  • 1 large red tomato.

  • 1 cup canned boiled tomatoes.

  • 1 tablespoon tomato paste.

  • 1 tablespoon butter.

  • 2 tablespoons olive oil.

  • 2 cloves of garlic.

  • 125 ml of boiled water/broth.

  • Tex Mex Seasoning
  • 1 teaspoon ground black pepper.

  • 1 teaspoon paprika powder.

  • 1 teaspoon cayenne powder.

  • 1 tsp dried oregano.

  • 1 teaspoon ground cumin.

  • 1 teaspoon garlic powder.

  • 1 tablespoon salt.

Directions

  • Chop the onions tomatoes finely.

  • Rinse the rice thoroughly.
  • Heat Olive oil and butter, saute garlic and onion until wilted.

  • While waiting to cook, mix ground beef with the same seasonings.
  • Stir-fry with 1 tablespoon olive oil.
