Breakfast Taquitos

When I think about the most delicious breakfast food I have ever had in my life, the first thing that comes to mind is definitely Breakfast Taquitos. The breakfast taquitos that most Mexican and South American restaurants serve are super fresh, fluffy, and filling, and are perfect for any kind of eating experience.

But for some reason they are not as popular in the United States as they should be. It is a shame because there is so much to love about taquitos. Here are some reasons why you should have a taquito brunch this morning: Breakfast Taquitos is a great way to start off your fast because it is such a healthy choice and packed with nutritious ingredients that are good for you.

It’s a very popular choice for people who are on a diet because it’s super easy to prepare, has a lot of flavor, and is filling. You can have a delicious taquito sandwich in about 15 minutes and it is so simple to make and it’s healthy too!

A great alternative to any quick meal would be to serve them on your table at dinner time because that’s how I usually have them. It’s so easy to have a taquito on your table and a delicious meal to boot!

Breakfast Taquitos

These breakfast taquitos pack a huge flavor punch and are a fun alternative to breakfast burritos. So easy to make ahead and reheat, too!

Ingredients

  • 6 eggs

  • 2 tsp taco seasoning

  • 10 strips cooked bacon Omit for vegetarian taquitos

  • 1¼ cups shredded cheddar cheese (Or another shredded cheese of your choice, such as Monterey Jack or a Mexican-style blend)

  • 1¼ cups salsa a chunky style is best

  • 10 soft tortillas Fajita (small) size, no larger than 6 inches. Can use flour or corn tortillas (corn for gluten-free).

  • Cooking spray (Or butter)

  • Accompaniments (As Desired)
  • salsa

  • taco sauce

  • sour cream

  • guacamole

Directions

  • Preheat oven to 350°. Preheat a skillet over medium heat.
  • Whisk together eggs and taco seasoning.
  • Lightly grease skillet with nonstick cooking spray or butter.
  • Pour egg mixture into the skillet and cook as scrambled eggs. Use a spatula to push the eggs toward the middle and flip the eggs around as they cook. Cook the eggs until they are just done, about 5 minutes.
  • Remove eggs from heat and set aside.
  • Lightly spray baking sheet with nonstick cooking spray or line with parchment paper.
  • Assemble each taquito by placing one crumbled strip of bacon, 2 tablespoons cheese, and 2 tablespoons salsa onto the middle of the tortilla. Divide the scrambled eggs equally among the taquitos.
  • Roll each taquito tightly and place seam side down on a baking sheet. Tip: Use a knife to hold the filling in place as you start to roll. If your taquitos seem to be unrolling, move them close together on the baking sheet or secure each one with a toothpick.
  • Bake for about 10 minutes until taquitos are crispy.
  • Serve with desired accompaniments. If making ahead of time, store in the refrigerator in an airtight container.

Notes

  • To reheat in oven: Place on a baking sheet and heat oven to 350. Cook for about 20 minutes while the oven heats. (This saves time versus preheating the oven first).
  • To reheat in microwave: Microwave for about 45 seconds to 1 minute.
