spent NYE watching the football playoffs at my house. these Artichoke Parmesan Bites was one of our favorites appetizers.

They have a unique taste that is both tasty and healthy making them the perfect pick me up snack. These Artichoke Parmesan Bites will make your mouth water as you bite into them with a fork.

A spinach and garlic bread bowl is easy to prepare and yet is delicious and so nutritious. The spinach leaves cook in the pan and stay tender until the cheese begins to melt.

Then add a few drops of olive oil to help them stick together better, fold the half circle of cheese over the spinach leaves to seal in the flavors, and you have a delectable treat that is healthy, cheap, and easy to prepare!

Artichoke Parmesan Bites – only 5 ingredients! Can make ahead of time and refrigerate or freeze for later. Great for parties! We could not stop eating these. YUM!

Ingredients

  • 3 (6-oz) jars marinated artichoke hearts, drained

  • ¾ cup freshly grated Parmesan cheese

  • 1 tsp garlic salt

  • 4- oz cream cheese, softened

  • 2 (15-count) packages mini phyllo shells

Directions

  • Preheat oven to 350ºF.
  • Place artichokes in food processor. Pulse 4 times, until artichokes are finely chopped.
  • Add parmesan cheese, garlic salt and cream cheese. Pulse 2 or 3 times, until combined. Scoop into phyllo shells.
  • Bake for 15 to 20 minutes, until heated through.

Notes

  • Can freeze tarts unbaked for a quick snack later.
  • Can bake tarts frozen. Add a few minutes to the cooking time.
